SPRING 2018 – Have you taken in a summer sunset on the Cindy’s terrace? The beautiful peachy hues are even better with a glass of bright wine in-hand. The new rosé wine program at Cindy’s, launched April 18th, was inspired by our view and crafted to show a gradation of color from pale peach to ruby hues that capture the sunset from our beautiful terrace. Sommelier Sterling Knight tasted over 100 rosés from different purveyors all over the world to discover the nuances, flavor profiles and colors that would best suit the Cindy’s experience —and pair really well with the foods of course. On her personal connection to the Cindy’s rosé program:
“I actually went to Castello di Bossi and stayed in the Castle. When you drive up to the property, the bushes are bay leaves, the shrubbery is rosemary, on the ground its thyme and sage. You can literally just pick and have pockets full of cooking herbs. So, a lot of the times the Mediterranean wines do taste like the herbs because they permeate the soils. When I visited, it was 95 degrees and there was no air conditioning, everything was stagnant, so I had the idea to get our team together and drag all of our blankets into the vines. We sat drinking wine and listening to music in between these old Sangiovese vines and fell asleep, waking with the Tuscan sun. The particular vintage on the menu is from the grapes I slept amongst, so it holds a cool story.” – Sommelier Sterling Knight
